Lottie, our resident Chef has been fermenting for over 30 years and loves to share what she knows. You will learn how to make delicious lacto-fermented vegetables and how to eat them. She will teach you basic kombucha making as well as introducing you to make your own apple scrap vinegar. Lottie will teach you tricks of the trade, how to use aromatics and spices and how to incorporate the rituals of fermentation into the rhythm of your everyday life .

You will taste a selection of ferments and drinks to inspire you on your very own fermentation journey.

Suitable for guests AND Non- guests. No experience required.

Come and make delicious fresh pasta made with wheat flour and eggs. Our resident Chef, Lottie will show you how and help you master the art of melt-in-your-mouth-pasta, fold & shape iconic tortellini pasta and make your own fresh ricotta-style cheese to go with it all.

We will enjoy a sit down lunch in the beautiful farmhouse kitchen and as well as enjoying what you have made we will pour some excellent natural wine from some of the best winemakers in Ardeche.

You may have heard of the book Norwegian Wood and this is for all budding lumberjacks and guests looking for a mindful outdoor winter activity. Its a thing!

In this 3 hour session you will learn how to chop UP a tree, stack wood, make kindling and light a fire in a controlled setting. You will learn how to identify wood that is ready for chopping, learn how to use an axe and operate a chainsaw under the guidance of Jean Marc, Co- Founder of Margot and former teacher.

Gong Bath

A Gong bath involves participants immersing themselves in the sound vibrations produced when a mallet is tapped on the gong.

Participants lay comfortably on a yoga mat and or sheep skin, are fully clothed and covered by a blanket to enhance a sense of warmth and comfort.

The ”sound bath”, is thought to provide stress-relieving benefits, promote emotional release and healing.

Wine Tasting - Treslus Degustation

Sophie Roumanet is an exciting new face on the Ardèche wine scene and a name to watch. Born and raised in Ardèche, Sophie, who worked in wine tourism for a some years, inherited a little plot of vines that started the dream : to make her own natural wine.

After going back to school, two seasons working the vines in a local winery, and a lot of paperwork, she produced her first vintage in 2023 with organic grapes bought from winegrowers friends, in an other friends’ cellar. At the start of 2024 she finally took over the family vines, found a cellar of her own and continued her adventure. Her goal is to produce fresh, joyful and accessible wines!

We, here at Margot, are HUGE fans of her wines, and love the Neo- Vigneronne’s passion for winemaking, We urge you to come and meet Sophie and taste for yourself!
